Baked French Toast Casserole

Serves: 6–8
Prep Time: 15 minutes (+ overnight soak optional)
Bake Time: 40–45 minutes

Ingredients

  • 1 loaf day-old bread, cubed
  • 6 eggs
  • 2 cups milk
  • 1/2 cup cream
  • 1/2 cup sugar
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • Pinch of salt

Instructions

  1. Grease a baking dish and add cubed bread.
  2. In a bowl, whisk eggs, milk, cream, sugar, vanilla, cinnamon, and salt.
  3. Pour mixture over bread, ensuring all pieces are coated.
  4. Cover and refrigerate overnight (or at least 1 hour).
  5. Bake at 350°F (175°C) for 40–45 minutes until golden.

Serve with: Maple syrup, fresh berries, or a dusting of powdered sugar.

Lemon Poppyseed Loaf

Serves: 8–10
Prep Time: 15 minutes
Bake Time: 50–60 minutes

Ingredients

  • 1 1/2 cups flour
  • 1 tbsp poppy seeds
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • Zest of 1 lemon
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix dry ingredients in one bowl.
  3. Cream butter and sugar, then add eggs.
  4. Stir in milk, lemon zest, and juice.
  5. Combine wet and dry ingredients.
  6. Pour into pan and bake 50–60 minutes.

Optional glaze: Mix icing sugar with lemon juice and drizzle over cooled loaf.

Spring Salad with Homemade Vinaigrette

Serves: 4–6
Prep Time: 15 minutes

Ingredients

Salad:

  • Mixed greens
  • Cucumber, sliced
  • Cherry tomatoes
  • Radishes, thinly sliced
  • Crumbled feta (optional)

Vinaigrette:

  • 3 tbsp olive oil
  • 1 tbsp vinegar (white wine or apple cider)
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt & pepper to taste

Instructions

  1. Combine salad ingredients in a large bowl.
  2. Whisk vinaigrette ingredients until emulsified.
  3. Toss just before serving.

Tip: Add grilled chicken or salmon to make it a full meal.
