Summer is here—and that means it’s time to fire up the grill, gather with your favourite people, and enjoy easy, flavour-packed meals under the sun. Whether you're planning a Father’s Day feast or a relaxed weekend get-together, these simple yet impressive recipes will help you host with heart.

Maple Chipotle BBQ Chicken Skewers

Sweet, smoky, and with a little kick—these chicken skewers are a crowd-pleaser that pack bold summer flavour.

Ingredients:

  • 1½ lbs boneless, skinless chicken thighs, cut into chunks

  • ¼ cup pure maple syrup

  • 2 tbsp chipotle peppers in adobo sauce, minced

  • 2 tbsp olive oil

  • 1 tbsp soy sauce

  • 1 garlic clove, finely minced

  • Salt & pepper to taste

Directions:

  1. In a bowl, whisk together maple syrup, chipotle, olive oil, soy sauce, and garlic.

  2. Add chicken, toss to coat, and marinate for at least 1 hour (or overnight for deeper flavour).

  3. Thread onto skewers and grill over medium-high heat for 10–12 minutes, turning occasionally, until charred and cooked through.

Grilled Veggie Platter with Herbed Yogurt Dip

This colourful, vibrant side dish works for just about any summer spread—vegetarian, gluten-free, and full of flavour.

What You’ll Need:

Veggies (mix and match):

  • Zucchini, red bell peppers, mushrooms, asparagus, red onion

For the Dip:

  • 1 cup plain Greek yogurt

  • 1 tbsp fresh lemon juice

  • 1 tbsp olive oil

  • 2 tbsp chopped fresh herbs (we love dill, mint, or parsley)

  • Salt & pepper to taste

Directions:

  1. Slice veggies and lightly brush with olive oil.

  2. Grill on medium heat until tender and charred.

  3. Mix dip ingredients together and serve chilled alongside the warm veggies.
    Tip: Add some grilled bread or flatbread for extra points.

Grilled Vegetable Platter with Yogurt Mint Sauce


Peach & Basil Sparkling Lemonade (Non-Alcoholic or Boozy!)

A refreshing twist on classic lemonade, with fresh peaches, fragrant basil, and a fizzy finish. Make it family-friendly or add a splash of Prosecco for a grown-up treat.

Ingredients:

  • 3 ripe peaches, sliced (plus more for garnish)

  • Juice of 4 lemons

  • 1 tbsp honey or simple syrup (adjust to taste)

  • Handful of fresh basil leaves

  • Sparkling water (or chilled Prosecco)

  • Ice

Directions:

  1. In a pitcher, muddle peaches and basil with lemon juice and honey.

  2. Strain into a clean pitcher. Fill with ice and top with sparkling water or Prosecco.

  3. Garnish with peach slices and fresh basil.
