Lemon Blueberry Loaf
Ingredients
-
1 ½ cups all-purpose flour
-
1 teaspoon baking powder
-
½ teaspoon baking soda
-
¼ teaspoon salt
-
½ cup unsalted butter, softened
-
¾ cup granulated sugar
-
2 large eggs
-
Zest of 1 lemon
-
2 tablespoons fresh lemon juice
-
½ cup plain yogurt or sour cream
-
1 cup fresh blueberries
Directions
-
Preheat oven to 350°F. Grease a loaf pan and lightly flour it, or line with parchment paper for easy removal.
-
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
-
In a separate large bowl, cream butter and sugar until light and fluffy.
-
Add eggs one at a time, mixing well after each addition. Stir in lemon zest and lemon juice.
-
Mix in yogurt or sour cream until smooth.
-
Gradually fold the dry ingredients into the wet ingredients — be careful not to overmix.
-
Toss blueberries with a teaspoon of flour (this helps prevent sinking), then gently fold into the batter.
-
Pour batter into the prepared loaf pan and smooth the top.
-
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
-
Allow to cool in the pan for 10–15 minutes before transferring to a wire rack.
Optional Lemon Glaze
For an extra pop of brightness, whisk together:
-
1 cup icing sugar
-
1–2 tablespoons fresh lemon juice
Drizzle over the cooled loaf and let set before slicing.
