We're not sure about you, but our team over here at Heart of the Home has been just a tad obsessed with pineapples. Maybe it's the warm Edmonton weather we've been blessed with, mixed with the sweet, tangy fruit that get's us excited about all things pineapple, or maybe it's just that you can do SO many things with pineapples! From pineapple salsa, and pineapple chicken, to this absolutely delicious pineapple mojito, we are hooked.
What's your favourite way to eat pineapple?
FOR THE PINEAPPLE SYRUP
FOR THE MOJITOS
In a saucepan, bring the pineapple, brown sugar and 4 cups of water to a boil. Simmer over moderately low heat, stirring, until the pineapple is very soft and the mixture is reduced to 2 1/2 cups, 40 minutes. Strain the mixture into a heatproof bowl, pressing on the solids; discard the solids. Let the syrup cool; you should have about 1 1/3 cups.
In a pitcher, muddle the pineapple and mint leaves. Stir in the rum, lime juice and 1 cup of the pineapple syrup. Pour into 8 glasses and add ice. Top with club soda and garnish with mint sprigs and lime wedges.
The syrup can be refrigerated for 2 weeks.

The timing of the 124th Street bridge opening couldn't have been better as it coincided with the opening of our doors. It is so great to see all the vehicles driving by and the vibrancy of the neighbourhood come alive with that major thoroughfare back in business.
It has been an extremely busy but very exciting first few weeks at Heart of the Home as we welcomed all of our new customers to come in and check us out. We felt overwhelmed with gratitude for all of the support we received to get the store up and running and we are extremely grateful to the High Street community who have welcomed us so graciously and of course to our family and friends who went above and beyond to help us to get it done. Thank you all.
We can barely contain our excitement as we open all of the boxes and see all of the beautiful, shiny new kitchen items that will soon be available for purchase. It's only a couple weeks to go until we open our doors, greet our customers and show them all we have to offer!
